Beaumont Inn Corn Meal Mix

This is the same mix we use to make those delicious corn meal batter cakes for the Beaumont Inn breakfast! Make sure you let the mix "rest" after combining for about 5 minutes.  Of course you know the secret ingredient is lard, which we use to grease the griddle, but any vegetable oil will do!
